Day 13 — The Difference Between Presence and Measurement
A daily LinkedIn landing article for operators, buyers and insurers who need evidence for food that travels in passive containers.

Reader problem
The question is whether the record follows the food.
Temperature-sensitive food often leaves a controlled room and moves through a less visible part of the operation. It may be an airline catering cart, an insulated crate, a hospital meal box, a ward trolley or another passive container. The common problem is the same: once the food is moving, the evidence often becomes thinner.
This does not mean the operator is careless. It means the record was built around fixed checkpoints while the commercial risk often sits between them. A fridge log, dispatch sheet or receiving tick may be useful, but it may not reconstruct what happened inside the container during the journey.
Evidence gap
When a question is asked later, the details matter.
Which container was involved? When did it leave controlled temperature? How long was it exposed? Was the reading precise enough near a threshold? Did the gateway hear the sensor? Were there missing-data windows? Was the record sealed, or reconstructed from memory?
These questions appear in supplier assurance, operational review, audit preparation, insurer discussions and incident reconstruction. The stronger the record, the less the business has to rely on assumptions.
What good looks like
Evidence should travel with the container.
A useful record links container identity, sensor identity, timestamp, temperature, evidence quality and exception logic. It keeps raw data. It separates presence from measurement. It flags coarse precision rather than pretending every reading is equally strong.
That is the standard GCCAP is building toward: not louder claims, but better evidence. GCCAP supports review of observed temperature behaviour. It does not certify food safety, declare legal compliance or assign liability.
